Yum Yum In My Tum Tum.

Our Kitchen.
One of my favourite rooms in my parents house... I spend a lot of time in here, being "resident chef" and all... it's so easy to move around, open and light - with little licks of red here and there... can you spot the birds?

All day long I have been thinking about how insanely good it felt to purchase and receive (support!) our first Hilbarn box. I said to my mum: "I feel like I've done something good!"
My tummy will DEFINITELY be agreeing with me tonight!

We were umming-and-ahhing about what to cook for dinner... we have so many vegetables at the moment, we decided to do a very simple, yet super tasty (and healthy!) Roast Vegetable Spaghetti dish.

We used from our Hilbarn box - one zucchini and a few cloves of garlic.

So simple...
Zucchini, red capsicum, mushrooms, red onion, asparagus and garlic are the vegetables.
Salt & Pepper, (good) Olive oil and a splash of Balsamic Vinegar... slow roast all of the ingredients.
Whilst cooking the spaghetti - I went out and picked some fresh basil leaves from our herb pot. Also, we toasted a few pine nuts.

Once everything had finished getting hot & steamy, we tossed it all together, sprinkled the pine nuts and basil leaves over the top and served warm, with a tiny sprinkle of Parmesan.

Yum Yum YUM!

Haha... Oh imagine that - a nationwide holiday, bunny-hoppin' from place to place with only the wooden spoon in my back pocket to pay my way! I'd love to cook for you ;o)
